VOLCANO LIMONCELLO BURST's174;
1 and 1/2 squeeze bottles of Volcano Lemon Burst's174; (300ml 10.1 ounces)
1 cup organic sugar
2 cups water
2 cups plain vodka (80 proof)
What to Do:
Heat the water and melt the sugar in it, to obtain a clear syrup. Don's185;t let it boil. Set aside and let it cool.
Mix together the syrup with vodka and squeeze in the Volcano Lemon Burst's174;. Stir the Limoncello Burst and
refrigerate it before drinking. Do not add ice.
The final liquor has a mild alcoholic content (3540 proof). Add and extra cup of vodka and another 1/2 squeeze
bottle of Volcano Lemon Burst's174; (100ml), to increase that to approximately 4555 proof.
This liqueur will freeze if put into the freezer, unlike higher proof liqueurs.
VOLCANO LEMON BURST's174; LAVA MOUSSE
1 pint strawberries
1 packet unflavored gelatin
1/2 cup cold water
3/4 cup sugar
2 teaspoons grated lemon zest
1/2 cup Volcano Lemon Burst's174;
1 tablespoon extralight olive oil
1 large egg
1 1/3 cups plain fatfree yogurt
What to Do:
1. Core strawberries and slice thickly.
2. Sprinkle gelatin over 1/4 cup cold water in small bowl. Let stand 5 minutes to soften.
3. Whisk together remaining 1/4 cup water, sugar, Volcano Lemon Burst's174;, oil, and egg in medium saucepan until
well combined. Cook over low heat, whisking constantly until mixture is hot, about 5 minutes. Whisk in softened
gelatin and cook, whisking constantly until gelatin has dissolved, about 1 minute.
4. Remove from heat, transfer to medium bowl, and cool to room temperature, whisking occasionally. Whisk in
yogurt. Alternately layer strawberries and lemon mousse in 8 dessert bowls and chill until set, about 3 hours.

ITALIAN VOLCANO's174; BLOOD ORANGE CRANBERRY SAUCE
1 cup white sugar
1 cup Italian Volcano's174; Blood Orange Juice
1 (12 ounce) package fresh cranberries
What to Do:
1. Wash and pick over cranberries. In a saucepan bring to a boil water and sugar, stirring to dissolve sugar. Add
cranberries, return to a boil. Reduce heat, simmer for 10 minutes or until cranberries burst.
2. Mix in a half a cup of Italian Volcano's174; Blood Orange Juice. You can add a cup of raisins or currants. Spices
such as cinnamon, nutmeg or allspice can be added too.
VOLCANO LEMON BURST's174; MUFFINS
2 cups unbleached flour
1/2 cup sugar
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup butter
1/2 cup Volcano Lemon Burst's174;
2 eggs
What to Do:
1. Heat oven to 400's176;. Spray muffin tins.
2. Combine flour, 1/2 cup sugar, baking powder and salt; blend well.
3. Melt butter. Turn off heat, stir in Volcano Lemon Burst's174;, and eggs.
4. Stir egg mixture into dry ingredients and blend until well moistened.
5. Spoon into greased muffin tins, sprinkle top of batter with 2 tbsp. sugar.
Bake 1520 minutes until lightly browned, but do not over bake!
