Our constantly increasing range includes hand made traditionally cured Serrano Hams, Chorizos, pork loins cured with paprika and herbs as well as several types of cured Tuna known respectively as Mojama and Atun Ahumado. Mojama is cured in a manner similar to that introduced by the Phoenicians nearly 4000 years ago being simply salted and air dried. Atun Ahumado is cured slightly differently by being smoked as well.
