Costa d'Este Beach Resort, a world class retreat in Vero Beach, is gaining popularity as its head chef, David Rodriguez was recently profiled in Vero Beach Magazine. Rodriguez recently came on board to Costa d'Este, which is owned by Vero Beach residents, Gloria and Emilio Estefan. Rodriguez will be adding his own signature dishes to the menu, such as Vaca Frita, twice-cooked skirt steaks marinated with oregano and bitter orange Mojo and a maki roll with coconut rice, avocados and piquillo peppers. Rodriguez has also cooked in restaurants in New York City and New Jersey.
