Executive Chef Nicolas Trueblood has been honing his culinary talents in kitchens across the United States for nearly 12 years. Still young, Chef Trueblood's career has been marked by
rapid assimilation of new cuisine, and promotion in every kitchen in which he has worked.
A native of Boston, Massachusetts, he spent time early on sharpening his skills in one of the city's best kitchens learning from premier chef and restaurateur Ken Oringer of Clio at the
Eliot Hotel. From there Trueblood moved to Chicago, cooking first at Tru, and later working with master chef Arun Sampanthavivat at Arun's, one of the most acclaimed Thai restaurants in
the country.
Now living in Kentucky, Trueblood has most recently been Chef de Cuisine at Holly Hill Inn. With his original menus in place, the restaurant received exceptional reviews and many
accolades that helped solidify its reputation as a destination for fine dining in Kentucky.
After leaving Holly Hill, Trueblood returned to Boston for a short stint as a private chef, while surveying the thriving Boston restaurant scene for new ideas and innovations in haute
cuisine. His cuisine is recognized for expert knowledge of many traditional techniques and ingredients, combined with a passion for exploring and enjoying food.
