Berkshire Living Magazine Features Sabor Restaurant

The March/April 2008 edition of Berkshire Living Magazine features a lavish spread celebrating the cuisine and ambiance of Sabor Restaurant. Berkshire Living Magazine is dedicated to both reflecting and informing the unique community for which it is named and regularly covers cultural offerings, cuisine, and attractions of the region.

Opened in 2006, Sabor Restaurant is the tasteful creation of co-owners Paul Saldana and his wife, Digna Gonzalez. Saldana is the executive chef and trained at the French Culinary Institute. He honed his skills in Manhattan where he became quite well known and respected. Originally from Ecuador, Saldana and Gonzalez, who is also the front house manager, chose the Berkshires when they decided to open their own restaurant. "The Berkshires is like a family, and it's safe," says Gonzalez.

Berkshire Living Magazine was impressed with the restaurant, singling out the exquisite combination of traditional Latin recipes and spices with the French cooking techniques employed by Saldana. "The result is sublime." The magazine notes that "Sabor takes a lighter, healthier approach to Latin American cuisine, offering a greater selection of vegetables and fewer fried foods." It also shares with its readers that there is a strong emphasis on fine ingredients and that the restaurant has a "well-edited" wine list. And while the food is marvelous, they note that "What elevates the restaurant most, however, is the polite, attentive, and well-paced service that puts some of the areas higher-profile eateries to shame."

The dcor is a mix of South American accents, wrought iron and dark woods. The walls are "the color of warm apple fritters," and candles are liberally used on individual tables as well as in the corners of the room. Berkshire Living Magazine writes that the decorative elements "together evoke an old fashioned Southwestern supper club," and concludes that the "effect is at once stimulating and relaxing, intimate and communal."
