- Dawson, a restaurant consultant and teacher, created the symposium after realizing her students - both potential and established restaurateurs - had identical challenges. "I realized very quickly that I was giving the same advice over and over," Dawson said, citing undercapitalization as a common industry mistake. With restaurants failing at a rate of sixty percent in the first three years, Dawson hopes Restaurant Bootcamp will educate attendees on how to overcome the odds.
